DECOLORIZED YEAST CELL WALL FRACTION

A yeast cell wall fraction comprising a cell residue, which is obtained by removing soluble cell components from enzymatically treated yeast cells, or the above-described cell residue is treated with an acidic aqueous solution. After removing components soluble in the acidic aqueous solution, the residue is decolorized with a decolorizing agent. Thus, a decolorized yeast cell wall fraction sustaining the excellent properties of the yeast cell wall fraction before the decolorization and having additional favorable properties imparted thereto can be obtained. This decolorized yeast cell wall fraction is in a white color and sustains the advantages, in using as a coating, of the yeast cell wall fraction before the decolorization. Moreover, it has additional favorable properties such as improved mechanical characteristics and lessened yeast smell imparted thereto.
