<P>PROBLEM TO BE SOLVED: To provide a method for producing persimmon juice, capable of simply producing persimmon juice not impairing taste of persimmon, not causing nasty smell and discoloration and having many tannin contents in a short period and capable of using a mature persimmon other than an immature fruit as a raw material. <P>SOLUTION: The method for producing the persimmon juice comprises obtaining a liquid-like material from persimmon by a squeezing step, etc., successively mixing the liquid-like material with a reducing agent, concentrating the liquid-like material in which the reducing agent is mixed, subjecting the concentrate to low-temperature heating treatment and carrying out sterilization and enzymatic deactivation of the concentrate to produce a solution of persimmon juice in which juice component of persimmon is contained in an amount of 1-20 wt.% based on the amount corresponding to D-(+)-catechin amount. <P>COPYRIGHT: (C)2004,JPO |
