PROBLEM TO BE SOLVED: To provide a pressure vessel for retort sterilization which can be structured and equipped at low costs; and to provide a method of simple retort sterilization using the pressure vessel for retort sterilization. SOLUTION: The pressure vessel for retort sterilization is provided with a pressure lid 2 on an upper opening part 1A of a vessel body 1 so as to be openable. The pressure lid 2 is structured so as to airtightly sealing up the upper opening part 1A of the vessel body 1 via a sealing-up lock system 3. The strength of the vessel body 1 and the pressure lid 2 is set so as to stand internal pressure of≥1.5 atmospheric pressure in an airtightly sealed condition. The vessel body 1 or the pressure lid 2 is provided with a safety valve device 4 for discharging steam in the vessel body 1, and a thermometer 5 with information function noticing that the temperature of the inside of the airtightly sealed vessel body 1 rises up to≥120°C, and an air ventilating container body 17 which can accept a vessel 6 charged with the food to be subjected to retort sterilization arranged inside the vessel body 1.
