FIELD: heat- and mass-exchange processes; food-processing, medical and chemical industries; concentration of liquid foodstuff; separation of proteins from slaughtered cattle. SUBSTANCE: proposed vortex film- type evaporator includes cylindrical tubular element units for introduction of starting material and discharge of final product, electric heating elements for heating inner surface of said element and rotor mounted coaxially and used for forming film of raw material being treated, swirlers for forming vortex flow of air along said inner surface of cylindrical element from its inlet to outlet; swirlers include hollow rotors and exhaust fans mounted along one axis with rotor, as well as temperature control and monitoring units. In the course of evaporation, film of raw material being treated and vortex flow of air interact causing film to move towards outlet of element at simultaneous evaporation of moisture from it.
