PROBLEM TO BE SOLVED: To provide an apparatus for producing sherbet easily in a further short time and maintaining the sherbet without melting and freezing. SOLUTION: This apparatus 1 for producing the sherbet comprises a freezing machine 2 with a cooling surface 6, a cutter 8 with a cutting blade whose part of a blade edge is bent on a bending line to a low temperature source side as a side of the cooling surface 6 with a bending angle of 5°-30°with respect to the rotating surface, a sherbet production vessel 3 and an axial rotation mechanism 5. The freezing machine 2 cools the inside of the sherbet production vessel 3 through the cooling surface 6. The cutter 8 is supported by a pivot 7 set inside the sherbet production vessel 3 and the axial rotation mechanism 5 produces sherbet by stirring or maintains by stirring in the sherbet production vessel 3 through rotating the cutter 8 together with the pivot 7.
