PURPOSE: Provided is a process for preparing a beverage using cactus extract as a main ingredient. The cactus extract contains phenolio having anti-aging and anti-cancer effects, and edible fiber having constipation treatment effect, urination activity, appetite boosting effect and blood circulation activity. CONSTITUTION: A process for preparing a beverage using cactus extract comprises the steps of: adding 90 part by weight of purified water to 10 part by weight of cactus to give suspension; heating the suspension at 100 deg.C until its total volume is decreased to 80% to give a cactus extract; adding 5 wt.% of oligosaccharide, 5 wt.% of liquid fructose, 1.56 wt.% of apple concentrate, 0.18 wt.% of citric acid, 0.15 wt.% of vitamin C, 0.01 wt.% of mixed fruits flavoring agent, 0.05 wt.% of malic acid and 0.005 wt.% of sodium benzoate to 88 wt.% of the cactus extract; filtering the mixture using a filter having a pore size of 0.5-1 micrometer; filling the filtrate into a container; and vacuum-packing the container and sterilizing it at 90 deg.C for 18 minutes.
