<P>PROBLEM TO BE SOLVED: To provide a crushing method which can treat yeast cells used in the fields of food industries etc., inexpensively in a short time, without employing a self-digestion method, and without using ethyl acetate and is high in crushing rate and safe for food. <P>SOLUTION: A mixture obtained by mixing the yeast cells with a concentrated sugar aqueous solution of a sugar concentration from 25 w/v% to saturation or a mixture substantially equivalent to the mixture is heated for a specified time. Moreover, the yeast cells mixed with the concentrated sugar solution are crushed mechanically. The yeast cells can be dried before mechanical crushing. By employing the method, the yeast cells can be treated inexpensively in a short time and in a high crushing rate. The crushing method safe for food, drugs, etc., can be provided, and a sugar removing process can be omitted. <P>COPYRIGHT: (C)2004,JPO |
