A commercial bread or cake bakery mixes ingredients in batches which are then allowed to rise or ferment to a pre-determined time-temperature profile. The batches are held within separate containers which especially form a castor-mounted bucket (3) chain (5) conveyer assembly (14) coupled to a control unit (13). The lowest chain sprocket wheels (6) form part of a movable frame unit (1). On reaching the lowest point, the container is accessible for the usual operations e.g. kneading, filling, discharge. Each container has a transparent cover (4).
