PROBLEM TO BE SOLVED: To obtain a double-layer liposome which controls the lipid peroxidation reaction of a highly-unsaturated fatty acid such as docosahexaenoic acid, etc., has an oxidatively stable membrane structure and increases the residual ratio of the highly-unsaturated fatty acid in liposome. SOLUTION: The double-layer liposome comprises an outer layer and an inner layer composed of a phospholipid, contains at least phosphatidylethanolamine containing the highly-unsaturated fatty acid and phosphatidylcholine having a large occupied volume of a nonpolar part as the phospholipid, forms the liposome in the oxidatively stable membrane structure by much distributing the phosphatidylethanolamine in the outer layer, controls the lipid peroxidation reaction of the highly-unsaturated fatty acid such as docosahexaenoic acid, etc., has the oxidatively stable membrane structure and increases the residual ratio of the highly-unsaturated fatty acid.
