PROBLEM TO BE SOLVED: To provide a scraper for noodle-manufacturing rolling mill rolls, easily attaching/detaching and cleaning/disinfecting, capable of performing a mounting work even by a non-skilled worker without anxiety and effectively stripping off dough or dough refuse. SOLUTION: This scrapers are installed at each of stainless steel rolls 1, wherein, dough or a noodle belt is put into from an upper part of a pair of stainless steel rolls 1, and a formed or rolled noodle belt is discharged from a lower part. The scraper is joined in a state that the stainless steel blade 5 is fitted to a groove of a blade 6 made from a resin using a nylon as a raw material, and the stainless steel blade 5 is fixed by bolts 4 in a state of being nipped by a supporting part 2 and a fixing blade 3 made from stainless steel.
