摘要
本发明系提供一种具有不粗糙的滑润口感及舒畅的余味且风味优异之浓厚的巧克力饮料之制造方法。更具体而言之,于去胚芽的可可豆以水萃取之步骤与除去萃取液之不溶性固形份之步骤中,两个步骤之溶液温度比可可豆油脂为高,故可可豆之油脂含量为高、可抑制沈淀之产生且保存中之可可豆油脂不凝固,以制得巧克力饮料。故该巧克力饮料系具有不粗糙的滑润口感及舒畅的余味且风味优异。
