PROBLEM TO BE SOLVED: To obtain a calcium hydroxide having a large specific surface area and excellent fluidity at a low cost without adding a special apparatus to a dry slaking apparatus by using heat of a waste gas or the like for drying. SOLUTION: The method of manufacturing calcium hydroxide by adding water in which a slaking retarder is dissolved with calcium oxide in excess of a required quantity and drying hydrated calcium hydroxide obtained by mixing is provided. The quantity of the slaking retarder to be added is 0.05-3 pts.wt. per 100 pts.wt. calcium oxide and the water content after slaking reaction is preferably 15-35 pts.wt. per 100 pts.wt. produced calcium hydroxide.
