PURPOSE: A method for preparing an extract of yeast using beer yeast is provided, thereby removing distinct bad taste and flavor of yeast, so that it can be added in food to improve the taste of food. CONSTITUTION: The method for preparing an extract of yeast using beer yeast comprises the steps of: washing beer yeast with 20% alkali solution for 10 to 30 minutes; drying the beer yeast to inactivate enzymes in the beer yeast; suspending the dried beer yeast and treating the suspended beer yeast with heat for 20 to 60 minutes; and decomposing the heat-treated beer yeast with cell wall decomposing enzyme and protein decomposing enzyme at 45 to 55 deg. C and pH 6.5 to 7.5 for 6 hours or more, wherein the alkali solution is selected from sodium hydroxide, potassium hydroxide and sodium carbonate.
