FIELD: food-processing industry. SUBSTANCE: method involves mixing fat, protein and carbohydrate components with water and mineral additive; heating and homogenizing mixture; introducing pancreatin; dividing mixture into two parts; subjecting one of two parts to fermentolysis; drying both paths; crushing and mixing while introducing preparation produced by sequential extracting of Mortierella minutissima micromycet biomass with the use of non- polar extractant in above-critical state, water, alkaline, water, acid, water, alkaline, and water, with following joining of first extract with solid residue; reducing nutritive mixture with water before using. EFFECT: improved quality of finished product due to elimination of fat syneresis during storage and delamination of reduced mixture. |
