摘要 PROBLEM TO BE SOLVED: To provide a shellfish freshness-maintaining method by which nutrients in the shellfish can be increased in a short time, and to provide a freshness-maintaining solution. SOLUTION: The shellfish freshness-maintaining method comprises dissolving nutrients capable of being absorbed from the organs of the shellfishes except the digestive organs in water to prepare the freshness-maintaining solution 5, and then immersing the shellfishes 1 in the freshness-maintaining solution 5 to enhance the concentrations of the nutrients 3 in the shellfish flesh.
