Determining the saponification value of the oil component of an oil-in-water emulsion comprises feeding a part of the oil-in-water emulsion into a vessel, removing an amount of water in this part by evaporating to leave the oil part in the vessel, transferring the oil part into a measuring cell, testing the oil part using IR absorption spectrometry, and determining the saponification value by chemometrically analyzing the spectrum obtained based on comparison samples.
