<p><P>PROBLEM TO BE SOLVED: To provide a processing system of coffee which can create a fresh and clean flavor of coffee by shortening a period from a state of parchment coffee to a consumer. <P>SOLUTION: Green coffee is produced by performing threshing and cleaning, grading processing of the parchment coffee by a threshing and cleaning, grading processing control means 11A. In a regular coffee processing division 13 in which the green coffee is supplied from a threshing and cleaning, grading section 11 and delivered to a user, the regular coffee is processed by a regular coffee processing control means 13A. In a production management division 14, production and shipment are performed by a production management control means 14A. In an order acceptance division 15, order acceptance information from a user is received by an order acceptance management control means 15A.
