<P>PROBLEM TO BE SOLVED: To provide dough for a whipping-stabilized baked confectionery, to provide the baked confectionery obtained by baking said dough, and to provide a method for producing the baked confectionery comprising the step of baking said dough. <P>SOLUTION: The whipped dough for use in producing the baked confectionery by baking said dough is characterized in that a sugar alcohol sweetener accounts for ≥20 wt.% of the total sweetener ingredient contained in the dough, wherein the total sugar alcohol sweetener comprises, on a solid basis, 55-100 wt.% α-D-glucopyranosyl-1, 6-sorbitol and 45-0 wt.% α-D-glucopyranosyl-1, 1-mannitol and/or α-D-glucopyranosyl-1, 1-sorbitol. <P>COPYRIGHT: (C)2004,JPO |
