COOKIE COMPOSITION CONTAINING GARLIC

PURPOSE: A cookie composition containing chopped garlic or a garlic extract together with wheat flour as main ingredients is provided which contains garlic components beneficial to the human health. CONSTITUTION: A cookie composition contains 3 to 9% by weight of chopped garlic of 10 to 20 meshes or a garlic extract, based on 100 parts by weight of wheat flour. For an example, a mixture of 64g of butter, 130g of sugar, 2.1g of salt and 2.5g of baking soda is added with 33g of dextrose solution and 16g of distilled water and followed by kneading with 225g soft wheat flour for 2min and addition of 3 parts by weight of chopped garlic, based on 100 parts by weight of wheat flour. Then, the dough is rolled and baked at 160 to 180deg.C in an oven for 10min.
