<P>PROBLEM TO BE SOLVED: To provide a method for producing crushed and frozen acerola preserving red color and freshness in cryopreservation for a long time. <P>SOLUTION: The method comprises crushing a mixture of ripe fruits and unripe fruits of acerola and then packaging and freezing. As the unripe acerola fruits ripen the color changes to reddish and preserves redness and freshness as the total crushed fruits and enables a long time cryopreservation until shipping without change of taste. The rate of mixing the unripe fruits of acerola is determined according to the degree of ripening and amount of the ripe acerola fruits. <P>COPYRIGHT: (C)2004,JPO |
