<P>PROBLEM TO BE SOLVED: To provide a highly useful, highly fluid potato paste having a bioregulatory function. <P>SOLUTION: Peeled, heated and strained potatoes are treated with two or more enzymes to reduce their viscosity and produce branched oligosaccharides or to reduce their viscosity, produce branched oligosaccharides and increase antioxidative effect and angiotensin-converting enzyme-inhibitor activity. <P>COPYRIGHT: (C)2004,JPO |
