FIELD: canned food industry. SUBSTANCE: method involves preparing pea grains and media; charging pea grains and media into consumer cans; sealing and sterilizing cans, with pea used being smooth peas in biological maturity stage; subjecting peas to swelling; introducing into media preparation produced by sequential extracting of Mortierella jinkinii micromycet biomass with the use of non-polar extractant in above-critical state, water, alkaline, water, acid, water, alkaline, water; joining first extract with solid residue. Method allows use of basic raw material requiring specialized power consuming preparing and storage processes to be omitted. EFFECT: increased yield and improved quality of canned peas. 3 cl |
