PURPOSE: A method for producing a fermented soybean block(meju) using herbal plants together with bean, rice and barley is provided. Therefore, the product can be used for the preparation of soybean paste, red pepper paste and fermented soybean paste having a good taste. CONSTITUTION: Soybeans having a moisture content of 20 to 30% are soaked in a herbal extract, heated at 70 to 100deg.C and molded into a fermented soybean block after cooling to about 50deg.C. Herbal plants are selected from Acanthopanax sessiliflorus, Saururus chinensis, Schizandra chinensis, Cinnamomum cassia, Pueraria lobata, Astragalus membranaceus,Angelica sinensis, mushroom, chestnut, Atractylodis Rhizoma Alba, Paeonia lactiflora, pine needles, Pinellia ternata, Fructus Aurantii Immaturus, coix seeds, Aralia cordata, Cnidium officinale Makino, Pachyma hoelen Rumphius or the like. |
