PURPOSE: Provided is a method for preparing a food of pig intestine by eliminating fat and undesired materials and mixing with seasoning and fruits, wherein the seasoning eliminates the bad odor and the fruits tenderize the meat. CONSTITUTION: A preparation method a food of pig intestine comprises the steps of: mixing salt with a predetermined amount of pig intestine, followed by cleaning, elimination of fats and cutting into a predetermined size and drying; adding to the pig intestine seasoning composed of 1.34kg of boiled water, 80g of meat flavor, 40g of sodium glutamate, 40g of salt and 40g of kiwifruit; and aging the seasoned pig intestine at 0deg.C for 18-20 hours; and vacuum-packaging and quenching aged pig intestine at -20deg.C. |
