Dextrose is produced from starch or partially hydrolysed starch by hydrolysis with a glucoamylase-containing fungal enzyme, at least the initial stage of the hydrolysis being effected at a pH below 3, provided that when the initial stage of the hydrolysis is effected at a pH of 1.5 or below, the pH is adjusted to above 3 during the latter stage of the hydrolysis. It is preferred to use partially converted starch having a reduced viscosity when dispersed in water. Acid or enzymic hydrolysis of starch to obtain a substrate having a solids concentration of 20-45% provides a suitably converted starch. Lower sugars can be used in the process. An unpurified fungal enzyme preparation containing other enzymes in addition to glucoamylase may be used. The hydrolysis is preferably conducted at 35-60 DEG C. Examples relate to starch hydrolysis at constant low pH values and to hydrolysis at initial low pH values with subsequent increase of pH to, e.g. 4.
