摘要 PROBLEM TO BE SOLVED: To permeate smoking components even into fish flesh, especially a deep part of lean flesh or dark flesh and to carry out antioxidation and long-term preservation of the fish flesh because the smoking components cannot be permeated into the deep part of the fish flesh by a smoking treatment after sectioning of fishes though attempts to perform the smoking treatment of the fish flesh after the sectioning of the fishes for antioxidation and long-term preservation are known. SOLUTION: The live fishes used for food products are housed in a container such as a water tank and smoke is then diffused into a space or the water in the container and absorbed in the live fishes. Thereby, the smoking components are permeated through blood of the live fishes into the fish flesh. The fish bodies are subsequently taken out to carry out a treatment such as bleeding.
