PROBLEM TO BE SOLVED: To provide a round cutter for a meat cutting machine, which improves the commercial value and yield of meat products without causing a disturbance or a stain in the tissue of a cut surface of meat, and minimizes attachment thereto of waste and fat of meat, to thereby facilitate cleaning of the cutter and facilitate sanitary management. SOLUTION: The round cutter is obtained by progressively thinning the thickness t of a round rotary blade from a rotation center 1 toward the circumference of the blade, to thereby form an acute cutting edge 2 along the periphery of the blade. The round cutter has its rear surface 3 carved and therefore it is formed like a concave surface. Then the rear surface is further recessed stepwise at a location slightly inside of the cutting edge, to thereby form a hollowed portion 5 for preventing adhesion of waste and fat of meat.
