PROBLEM TO BE SOLVED: To provide a frozen dessert having favorable egg flavor, solving such a problem that it is egg yolk flavor that is imparted to a frozen dessert via an egg yolk processed product so as to have favorable egg flavor unlike the egg yolk flavor. SOLUTION: This frozen dessert having the favorable egg flavor is obtained by a method for making frozen dessert comprising the following processes: obtaining an egg composition by heating an egg-containing mixture comprising at least three kinds selected from the group of whole egg, egg yolk, and sucrose and milk-based raw material so as to denature the mixture, and adding the egg composition to a sterilized ice cream mixture. In the method, the egg composition may be added to the ice cream mixture before or during aging, or alternatively, after freezing. COPYRIGHT: (C)2004,JPO
