摘要 <P>PROBLEM TO BE SOLVED: To provide a method for producing mixed rice for cooked rice having a high nutritive value and capable of simply obtaining tasty cooked rice. <P>SOLUTION: The method for producing mixed rice comprises a step for roasting germinated rice in which &gamma;-amino lactic acid and essential amino acids are produced in large amounts at the same time by germination to improve flavor and taste and processing the germinated rice in physical properties suitable for cooking the rice and a step for processing soybean which is difficult to boil under the same conditions as milled rice into physical properties suitable for cooked rice by a physical roasting method carrying out heating under pressure and depressurizing and further, a step for mixing the processed germinated and unpolished rice and the processed soybean each in the prescribed amount with milled rice. <P>COPYRIGHT: (C)2004,JPO
