PURPOSE: A method of preparing salted pollack roe is provided which comprises soaking pollack roe in bamboo salt water and aging, mixing the aged pollack roe with bamboo salt powder, Cordyceps sinensis powder and seasonings. The manufactured salted pollack roe is rich in various minerals and has enhanced taste. CONSTITUTION: High quality pollack roe is mixed with bamboo salt having a salinity of 10% by weight and aged for 2 days in a chilling chamber maintaining at a temperature of 2 to 8deg.C. After the aged pollack roe is washed, 79.6% by weight of the aged pollack roe is then added with 9% by weight of Cordyceps sinensis powder, 6% by weight of bamboo salt, 4% by weight of red pepper powder, 0.2% by weight of chopped garlic, 0.2% by weight of sugar, 0.2% by weight of MSG, 0.3% by weight of sodium malate, 0.3% by weight of sorbitol and 0.2% by weight of seasoning red pepper powder. Then, the seasoned pollack roe is aged for 4 to 5 days in a chilling chamber maintaining at a temperature of 2 to 3deg.C.
