METHOD FOR SEPARATING AND PRODUCING WATER-SOLUBLE SPECIFIC PROTEIN(IGY) IN YOLK USING ELECTROLYTIC WATER AND SACCHARIDE

PURPOSE: A method for separating and producing water-soluble specific protein(IgY) in the yolk using electrolytic water and saccharide is provided, thereby increasing the production yield of IgY, and decreasing the time and costs for production of IgY. CONSTITUTION: A method for separating and producing water-soluble specific protein(IgY) in the yolk using electrolytic water and saccharide comprises the steps of: diluting specific yolk antibody solution in alkaline electrolytic water and acidic electrolytic water; and separating a water-soluble specific immune protein layer and a water-insoluble protein layer at 5 deg. C using gravity precipitating method.
