PROBLEM TO BE SOLVED: To provide a fryer capable of accurately measuring the degradation degree of oil without substantially increasing costs. SOLUTION: Two electrode terminals 8 are disposed on a side wall inside a tank 2 so as to be immersed in the oil of a hot zone H and the electrode terminals 8 are fixed to an electrode main body 9 arranged on the outer side of the side wall of the tank 2. The electrode body 9 is connected to a controller 10 as an oil degradation detecting means including a resistance detector. Further, to the controller 10, a buzzer 11 is connected as a reporting means. Power is supplied to the electrode terminals 8 by the electrode body 9 and an electrical resistance value R between the two electrode terminals 8 is detected at the controller 10. At the time of detecting that the electrical resistance value R lowers to a prescribed value Rc, the controller 10 judges that the oil is degraded, operates the buzzer 11 and reports to the user that the oil is degraded.
