Methods for extracting corn proteins from corn gluten meal

Methods of extracting corn proteins from corn gluten meal are provided. Specifically, the methods employ water-soluble organic compounds containing sulfhydryl groups to improve corn protein yield. Additionally, chewing gums and methods of producing chewing gums which incorporate the corn proteins of the present invention are provided as well.
