PROBLEM TO BE SOLVED: To provide a fryer capable of detecting whether an oil amount inside a tank is below or over a prescribed stipulated level by one sensor for one stipulated level at the time of detecting it. SOLUTION: The lower limit depth H1 of an appropriate oil surface range is determined for the tank 2 and a temperature detection element 10 of a temperature sensor 8 is disposed at the lower limit depth H1 so as to detect an oil temperature at the lower limit depth H1. The temperature sensor 8 is connected to an oil amount detection part 11 and a buzzer 12 is connected to the oil amount detection part 11. In the oil amount detection part 11, the temperature rise gradient is monitored from the temperature detected by the temperature sensor 8, and in the case that the temperature rise gradient is gentler than a prescribed gradient, it is judged that the temperature detected by the temperature sensor 8 is not the oil temperature but an atmosphere temperature and an oil surface is positioned below the lower limit depth H1, that is the oil amount is insufficient, and the buzzer 12 is operated.
