PROBLEM TO BE SOLVED: To provide rice flour dough affording a baked food of the rice flour dough having a good volume feeling and a good puffy feeling.

SOLUTION: The rice flour dough comprises an oil and fat composition containing a baking improver. The content of rice flour in a grain raw material is ≥50 wt.%. The rice flour dough contains 100 pts. wt. of the rice flour and 5-25 pts. wt. of a vital gluten.
