摘要 <P>PROBLEM TO BE SOLVED: To solve a problem in which aroma and taste of tea are diluted, because a green tea extract is permeated into bonito fish meat. <P>SOLUTION: The method for producing lightly-roasted bonito comprises a step for surface-washing frozen bonito loin, carrying the loin into a roasting chamber and roasting only surface of the loin, a step for carrying the surface-roasted bonito from the roasting chamber into a smoking chamber and carrying out smoking treatment of the loin for required time by a smoking material in which tea leaf is mixed with chips of a firewood material for smoking and a step for carrying the smoked bonito loin from the smoking chamber into a green tea powder-attaching chamber, mixing fresh green powder with an edible solid agent solution composed of a gelatin solution or a mixed solution of the gelatin solution with a thickening polysaccharide and applying the mixed solution of the green tea powder to one surface of the loin in the longitudinal direction. <P>COPYRIGHT: (C)2004,JPO
