FUNCTIONAL UNREFINED LIQUOR CONTAINING CHITOSAN OLIGOSACCHARIDE AND PREPARATION METHOD THEREOF

PURPOSE: Functional unrefined liquor containing chitosan oligosaccharide and a preparation method thereof are provided, thereby extending the storage of the unrefined liquor with maintaining its distinctive taste, and attenuating a hangover. CONSTITUTION: A method for preparing the functional unrefined liquor containing chitosan oligosaccharide comprises the steps of: dissolving chitosan using glacial acetic acid and lactic acid; inserting chitosan-decomposing enzyme into the dissolved chitosan in the amount of 30 to 50 mg per 1 kg; reacting the mixture at 45 to 60 deg. C with agitation; sterilizing the reaction product at 15 atmosphere for 10 minutes to prepare chitosan oligosaccharide; and adding 0.05% of chitosan oligosaccharide into the matured unrefined liquor, wherein the pH of the dissolved chitosan is 5.0 to 5.5; and the chitosan-decomposing enzyme is chitosanase isolated from Trichoderma reesei.
