FIELD: food industry. SUBSTANCE: invention relates to technology of high temperature treatment of milk, especially, to process of sterilization of milk in bottles made of polypropylene liable to deformation when exposed simultaneously to action of higher temperature and pressure. Proposed sterilization is carried out by delivering saturated steam into sterilization chamber with forcing out air from chamber and gradually increasing temperature and pressure in chamber to preset values. After holding of bottles with milk in chamber during preset period, water is fed into chamber (condensate formed at sterilization of pervious batch of milk bottles), excess steam is gradually discharged and sterilization chamber is filled with air to reduced pressure. Such method preserves appearance of polypropylene bottles without disturbing their shape at sterilization of milk in bottles and cuts down energy consumption for sterilization with provision of all quality characteristics of sterilized products.
