PROBLEM TO BE SOLVED: To obtain a germinated unpolished rice containing more γ-aminobutyric acid being a functional substance.

SOLUTION: A germination tank is installed in a germination room with an appropriate temperature, and humidity in the germination room is set to be ≥95%. Unhulled rice or unpolished rice is stored in a net bag, and after it is immersed in the germination tank for 48-64 hr, it is taken out from the germination tank, and it is kept warm in the germination room for several hours more to obtain a germinated unpolished rice containing more γ-aminobutyric acid.
