<p>A modular automated bread (62) baking oven has an automated feed module (14), a manually-operated feed module (16) and an oven module (18) incorporated within a common housing (12) or individual modular housings (12, 12', 12). The automated feed module (14) holds one or magazines for the portions of dough. The automated feed module further has a cooling unit (14). Each module has standard interface linkages (28, 30). The assembly also has a modular microwave module (38), a fermentation module, a packing module (34) and a cooling module (32). The assembly further incorporates an automated mechanical conveyer system which transports incoming dough through the various processes.</p> |
