PURPOSE: Provided is a method for manufacturing and maturing system using the jade and charcoal to improve freshness and clinical efficacy of kimchi more than ordinary, and to increase cleanness of kimchi ingredients. CONSTITUTION: A method for manufacturing and maturing system is characterized by applying the jade and charcoal to washing process of kimchi ingredients in order to remove impurities and bacteria, and to post-maturation process of kimchi in order to keep freshness of kimchi.
