<p>A process for producing a beer-like alcoholic beverage without the use of malt, barley, wheat, etc., comprising preparing a pre-fermentation liquid from raw materials of a syrup containing carbon sources, a material containing amino acids, hop, a coloring matter, a frothing/froth lasting enhancing substance and water and fermenting the pre-fermentation liquid in the presence of yeast so as to form an effervescent alcoholic beverage. This process enables obtaining a beer-like alcoholic beverage which has the same flavor and appearance as those of beer and which is excellent in froth lasting.</p> |
