PURPOSE: Provided are rib stew and a production thereof by using glutinous rice, mushroom and sweet potato as well as conventional rib stew ingredients. The product is removed from fat and rich in nutrients and has an improved taste and flavor. CONSTITUTION: Ribs of beef, black pepper powder, green onion leaves, apple and onion are heated with ginger spirits and a mushroom extract. The heated mixture is then mixed with strew sauce. A chopped sweet potato is spread on a steamer made of a bamboo, glutinous flour is sprayed thereon after the marinated ribs are placed on the sweet potato. A chopped mushroom is then placed thereon. Thereafter, the marinated ribs are placed on the chopped mushroom again and heated for 20 to 30min after sprinkling glutinous rice flour thereon. The strew sauce is prepared by heating pure soy sauce, ginger spirits, seasoning spirits, soup soy sauce, green onion, garlic, onion and apple, straining and then adding with honey, sesame oil and hot pepper sauce. |
