SUBSTANCE: invention relates to enzyme preparation in decomposing rhamnogalacturonane-II (RG-II) with activity of beta-L-rhamnopyranosyl-(1-->3')-D-apiofuranosylhydrolase and endo-alpha-L-fucopyranosyl-(1-->4)-L-rhamnopyranosylhydrolase preparing from the strain Penicillium daleae CNCN 1-1578 (LAV 2) and the strain Penicillium simplicissimum CNCN 1-1577 (IPVI). The enzyme preparation is prepared by culturing the strain Penicillium 1-1577 or 1-1578 deposited in CTCM, its isolation from supernatant cultural fluid or from supernatant fluid of disrupted strains. Method for selection of strains eliciting indicated activity involves selection of strains germinated in cultural medium containing monomeric RG-II. Prepared enzyme preparation is used as agent for decomposition and modification of RG-II, as agent for improvement of filtration or alleviation in preparing concentrated fruit juice or for improvement of clearing, as agent for treatment of filter backings and agent for maceration or hydrolysis of vegetable tissues.
