Production of a cloudy beverage by preparing an emulsion of an edible oil using a lecithin emulsifier and adding the emulsion to an aqueous beverage comprises using a lysolecithin-enriched lecithin as the emulsifier. An Independent claim is also included for a beverage comprising: (1) 0.01-0.5% edible oil; (2) 0.001-0.05% lecithin (comprising 50-100% lysolecithin); (3) 0-30% juice; (4) 0-15% sugar; (5) 0-2% water- or oil-soluble flavor; (6) 0-0.1% antioxidant; and (7) 0-1% colorant in water. |
