PURPOSE: A bakery food composition containing β-starch, α-starch, wheat flour and sugar and a method of producing a bakery food product such as cake, biscuit or the like using the same are provided. Therefore, the bakery food product has a chewy texture and good mouth feeling. CONSTITUTION: A bakery food composition comprises 50 to 80% by weight of β -starch, 6 to 25% by weight of α-starch, 7 to 30% by weight of wheat flour and 7 to 20% by weight of sugar. The β-starch is one or more selected from acetylated tapioca starch and hydroxypropylated tapioca starch. A flavoring component and water are added to the bakery food composition, agitated, formed and then baked to produce a bakery food.
