PURPOSE: A method for producing bagel is provided, thereby maintaining the taste of bagel which is doughnut shaped bread for a long time because the surface of dough is pre-gelatinized by slightly boiling or steaming. CONSTITUTION: A method for producing bagel comprises the steps of: mixing strong wheat flour, salt, sugar, shortening and yeast in water to prepare bagel dough; maintaining the dough at room temperature for a predetermined time; dividing the dough in a certain size and forming a hole in the center of it; fermenting the dough for a predetermined time; slightly boiling the fermented dough and cooling it at room temperature; rapidly freezing the dough at -30 to -40 deg. C; storing the frozen dough in a freezer; dissolving the frozen dough at room temperature; and panning and baking the dissolved dough in an oven.
