<p>The upright oven (1) has an inner baking zone (2) to take a multi-level baking trolley (3) which rotates around its vertical axis. A drive (21-23) gives the trolley rotation. The facing walls (4,5) of the baking zone have inflow (19) and outflow (18) openings for recirculating air, where a recirculating air flow (24) is generated by an air recirculation system (11,12,14). The rotary speed of the trolley is adjustable, to set the baking operation according to the type of bakery products.</p> |
