摘要 <p>In a process to treat sausages in a dehydration chamber (11), two sensors (28, 29) measure differential temperatures to determine the absolute air humidity. The temperature values are used as control unit (33) input values. The absolute air humidity is used to regulate the dehydration process. An Independent claim is also included for an assembly in which the sensors (28, 29) determine the difference between the dry and wet temperature values, from which the absolute air humidity is derived. The control unit (33) regulates the temperature in the dehydration chamber (11), the volume of circulating air, the humidity of incoming fresh air, or the rate at which air circulates the second differential temperature sensor (29) registers the absolute air humidity in the feed (19) and return (13) pipes. The control unit (33) compares the actual air humidity with a target value.</p>
