PURPOSE: A process for preparing sorbitan fatty acid ester is provided, thereby preparing sorbitan fatty acid ester having low coloring degree without using active carbon adsorption or product bleaching. CONSTITUTION: A process for preparing sorbitan fatty acid ester comprises the steps of: under catalyst system containing fatty acid metal salt and reducing phosphorous oxygen acid containing phosphorous oxygen acid in a ratio of 0.8:1-1.8:1, mixing 30 to 40 wt.% of sorbitol with 60 to 70 wt.% of fatty acid, and reacting the mixture at 80 to 150 deg. C; keeping the reaction resulting product under vacuum condition of 10 to 250mmHg to remove water; and heating the product at 170 to 240 deg. C, wherein the fatty acid metal salt is sodium stearic acid, calcium stearic acid or potassium stearic acid; and the fatty acid is selected from stearic acid, palmitic acid, myristic acid, lauric acid and oleic acid.
